Park Restaurant at Lotus Honolulu Announces Executive Chef and Unveils Menu

Culinary Veteran Michael Collantes accepts role as Park’s Top Chef preparing Mediterranean influenced cuisine

Honolulu, HI (July 18, 2013) –Park Restaurant, located at Lotus Honolulu, recently named Michael Collantes as Executive Chef of the recently opened restaurant. A 29-year-old seasoned veteran in the culinary world, Collantes has worked at various restaurants across the country, even staging under three chefs with 3 Michelin Starred restaurants including Chef Masa, Chef Eric Ripert and Chef Joel Robuchon. He brings to Park a fresh perspective on food and cutting edge techniques – demonstrated by today’s culinary generation.

Collantes studied culinary arts and worked at various restaurants in Florida soon after. He eventually became head sushi chef at Levy’s Restaurant and Wolfgang Puck Café. Soon after, his drive and determination led him in pursuit of new experiences and staged at many of the country’s top ranked restaurants such as Alinea, L2o and Le Bernadin. Always in pursuit to better himself as a chef, Collantes worked his way up the culinary ladder, even become a Chef de Partie for Chef Robuchon, who was once titled “Chef of the Century” by the guide Gault Millau.

“It’s an honor to be the executive chef of Park and be able to cook in Hawaii where food is appreciated both on a social and cultural level,” says Collantes. “I’m excited to use the local ingredients Hawaii has to offer – from the land and sea – to create an extraordinary menu.”

After developing his culinary skills under some of the world’s most celebrated chefs, Collantes now finds himself with the opportunity to create a menu all his own. With modern techniques, local ingredients, and a forward thinking approach; Collantes will present Mediterranean inspired cuisine that represents his diverse history and youthful enthusiasm.
The restaurant’s menu boasts a mix of classic Mediterranean dishes and modern cooking techniques. You’ll find small plates and appetizers such as Grilled Watermelon Salad with harissa, Stilton blue cheese, arugula, and smoked paprika popcorn in citrus vinaigrette. There’s also a variation of Flatbreads including one with Prosciutto ham, Taleggio cheese, tomato jam, and thyme. While main dishes such as a House made Potato Gnocchi & Lamb Ragu and an Opah Piperade will grace the menu.
